Preheat oven to 375°F (190°C).
In a big bowl combine all dry ingredients..
In a medium bowl mash the bananas, leaving some small chunky bits.
Add the oil, lemon juice and vanilla to the bananas and mix well.
Add the wet ingredients to the dry ingredients and combine until just mixed.
Pour the batter into a well buttered loaf pan.
Bake for 45 - 50 minutes.
Let cool in pan on rack for 15 minutes. Turn out onto rack, let cool completely.
