Vegan Chocolate Chip Banana Bread

Ingredients

  • 250 g all-purpose flour
  • 30 g granulated sugar
  • 30 g light brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup vegan chocolate chips
  • 1/2 cup walnut pieces
  • 3 large very ripe bananas or 4 medium size bananas
  • juice of 1/2 lemon
  • 125 ml coconut or canola oil
  • 1/2 tbsp vanilla extract

Instructions

  • Preheat oven to 375°F (190°C).
  • In a big bowl combine all dry ingredients..
  • In a medium bowl mash the bananas, leaving some small chunky bits.
  • Add the oil, lemon juice and vanilla to the bananas and mix well.
  • Add the wet ingredients to the dry ingredients and combine until just mixed.
  • Pour the batter into a well buttered loaf pan.
  • Bake for 45 - 50 minutes.
  • Let cool in pan on rack for 15 minutes. Turn out onto rack, let cool completely.
